Pineapple Crepes

Recipe from the Black Countess of Pineapple Crepes Ingredients1 small pineapple4 spoonfuls of quince jelly2 spoonfuls of cornstarch1 egg1/2 glass of milk1 glass of whisky butter saladPreparation Beat the egg with the cornstarch, milk and a pinch of salt; cover and leave to rest. Clean the pineapple and cut it into cubes. in a buttered pan prepare 4 crêpes with batter. dilute the jelly with the whisky, mix 2 thirds with the pineapple, then fill the crêpes with the mixture. Roll them up on themselves and place them in a buttered oven dish; cover with the remaining gelatine and place in a hot oven at 180° for 8-10 minutes.
