Recipe of the Black Countess of the Onion Cake Ingredients400 g of onions1 bunch of chives6 tablespoons of sifted flour3 tablespoons of oil6 eggs1 pinch of grated nutmeg15-20cl of milk10 cl of liquid cream, pepper PreparationSlice the onions into slices. Wash the chives, dry them and chop them. In a pan heat half the oil over medium heat, brown the onions for 5 minutes, stirring, then lower the heat and let them wither for another 5 minutes. In a bowl, mix the flour with the salt, pepper and nutmeg. Incorporate the eggs one at a time, then the milk and cream, stirring until you get a homogeneous mixture. Add the onions and 3/4 of the chives, stir the seasoning and heat half of the remaining oil in a pan over medium heat for about 10 minutes, putting a spatula into the dough from time to time, to distribute the heat well. When the bottom of the cake is golden, place a plate on the pan and turn it over. Heat the remaining oil in the pan and brown the other side of the cake over low heat for 10-15 minutes. Serve immediately hot, sprinkled with the remaining chives. |
