Place them in a saucepan and place the meat tied with kitchen string on top. Cover with a lid and cook, without adding any seasoning, over a very low heat for 1 hour. Remove from heat, salt and pepper abundantly, then turn the meat. Place on the heat and continue cooking for another hour, stirring occasionally the onions with a wooden spoon, to prevent them from sticking to the bottom. at the end of cooking untie the meat, cut it into slices and place it on a serving plate, garnishing it with the onions. VARIANT If you prefer, you can pass the onions through a sieve to make a sauce. Tie it by adding a little broth and 1 teaspoon of cornstarch and use it to accompany the meat, garnishing the dish with a few bay leaves. |
