Cosaruciaru Bean Salad with tuna ed cherry tomatoes

Recipe from the Black Countess - Bean Salad Cosaruciaro with Tomato Datterino and TunaIngredients: 300 gr. of Cosaruciaru Beans from Scicli; 150 gr. of date tomatoes; 160 gr. of canned tuna; 50 gr. of white onion; 100 gr. of celery; 20 gr. of fresh basil; extra virgin olive oil, salt and red pepper to taste. Method: Soak the beans for 4-6 hours. Boil the beans in plenty of unsalted water, drain and leave to cool, cut the tomatoes and celery into small pieces, chop the onion very finely, then add the tomatoes, celery, onion, crumbled tuna, extra-virgin olive oil and lastly the basil to the beans, just before serving, add salt and red pepper to taste.
